On December 10th, LECSA was proud to join colleagues and friends at the EAPA Holiday Breakfast. The turnout was energizing. The room was filled with thoughtful conversation, familiar faces, new connections, and a shared commitment to supporting workers and families across Long Island.

A Cozy Winter Break Recipe
As routines slow down and winter settles in, small comforts can make a big difference. Here’s a simple, nourishing recipe perfect for a cold day:
Hearty Winter Chicken & Vegetable Soup
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- Optional: a squeeze of lemon or handful of fresh parsley
Directions:
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and celery until softened (about 5–7 minutes).
- Add garlic and cook for 30 seconds.
- Pour in broth, add chicken and herbs, and bring to a gentle boil.
- Reduce heat and simmer for 15–20 minutes.
- Season to taste and finish with lemon or parsley if desired.
